Step 1

Mix Wet Ingredients: In a mixing bowl, cream together the room temperature butter and sugars for about 5 minutes until light and fluffy. Mix in the egg and vanilla extract until well combined.

Add Dry Ingredients: Add the gluten-free flour, cornstarch, and baking soda to the wet ingredients. Mix until just incorporated—be careful not to overmix. Fold in the chocolate chips and optional walnuts.

Chill Dough: Cover the dough and refrigerate for at least 1 hour, or overnight for best results.

Step 4

Prepare Air Fryer: Line the air fryer basket with parchment paper. Use an ice cream scoop (about 2 tablespoons) to scoop the cookie dough onto the parchment paper, leaving 2 inches of space between the cookies and the edges of the tray. You should be able to fit approximately 5 cookies per batch.

Step 5

Air Fry Cookies: Air fry the cookies at 325°F (163°C) for 9 minutes. Once done, leave the cookies in the air fryer basket for an additional 3 minutes before removing.

Step 6

Cool and Serve: Transfer the cookies to a wire cookie rack to cool completely. This will give the cookies a crispy exterior with a gooey interior. Enjoy your delicious treat!
