Step 1
Heat oil in a large, deep, non-stick, ovenproof frying pan over medium-high heat. Add beef and cook, breaking up with a wooden spoon, for 5 minutes or until browned. Add risoni and stir to combine. Stir in stock and pasta sauce, then bring to a simmer.
Step 2
Reduce heat to medium and simmer, covered, for 12-15 minutes, stirring occasionally, or until risoni is al dente. Stir in 1/3 pre-grated light mozzarella cup cheese.
Step 3
Preheat an oven grill to high. Sprinkle pasta mixture with remaining cheese. Grill for 1-2 minutes or until cheese is golden. Serve sprinkled with basil, if using, to serve.
