Heat olive oil in a large soup pot over medium heat. Add the diced onion, celery, and carrots, cooking for 6-7 minutes until the onions soften and turn translucent.

Stir in minced garlic, cauliflower florets, chopped cabbage, turmeric, cumin, paprika, and chili flakes (if using). Sauté for another 2-3 minutes until fragrant.
