Step 1
Preheat oven to 180C. Grease and line a 23 cm springform pan.
Step 2
To make the filling, combine ingredients in a saucepan. Cover and bring to the boil, simmer 5 minutes or until apples are tender. Drain and cool.

To make the cake, sift together flour, baking powder and cinnamon into a bowl.
Step 4
Using an electric beater, beat together with butter and sugar in a large mixing bowl until light and creamy.
Step 5
Add the eggs, one at a time and beat well after each addition. Gently stir in the flour and lemon rind until evenly combined.
Step 6
Spoon half the mixture into the prepared tin and smooth surface.
Step 7
Sprinkle apple filling over mixture and spoon over remaining cake mixture. Smooth surface.
Step 8
Bake for 50 minutes or until a wooden skewer pulls clean from middle of cake.
Step 9
Cool cake in tin for 5 minutes before turning out onto a wire rack. Cool completely before sprinkling with icing sugar.
