Preheat the oven to 425°F

In a large ovenproof skillet over medium low heat cook bacon until golden brown and crispy. Remove the bacon with a slotted spoon and set aside.

To the same pan sauté the shallots until softened for about 4 minutes. Add the minced garlic and cook for another minute.

Add the Brussels sprouts and stir. Season with salt, pepper, nutmeg and thyme.
Step 5
Pour in the heavy cream and fold in the cheeses until the cheese is starting to melt.
Step 6
Top with panko and place in the oven for 20 minutes until bubbling and lightly browned on top.
