Step 1
Heat the oil in a large saucepan with a lid.
Step 2
Fry the onions until lightly browned and translucent.
Step 3
Now add the chopped garlic and fry for a further minute being careful not to burn the garlic.
Step 4
Pour in the beer and bring to a rolling simmer.
Step 5
In go the clams! Cover the pan and cook until the clams open. This will take about three to five minutes.
Step 6
Add the chopped coriander and red chillies and season with salt and pepper to taste.
Step 7
Serve the clams and Kingfisher sauce on a large platter or serving dish. Be sure to discard any clams that don't open.
Step 8
Clams and Kingfisher are delicious served with fresh naans or crusty French bread.
