Step 1
Preheat your oven to 180°C /350°F (fan-forced).
Step 2
Place the oats in a well greased or lined tray or small casserole dish.
Step 3
In a blender, food processor or large jug, mix the milk, eggs, sweetener, vanilla and melted butter well. Thermomix, melt your butter 1 min, 100, speed 3 then add the milk, eggs, sweetener and vanilla and blend 30 seconds, speed 5.
Step 4
Pour over the oats and top with the raspberries and macadamia nuts.
Step 5
Place in the oven for around 20-30 minutes or until it is set (just firm in the middle). Eat immediately or cool and slice into portions.
Step 6
You can prepare this the night before, cover and refrigerate overnight. Then just throw it in the oven to bake the next morning. By soaking the oats, you make them more digestible and nourishing too.
Step 7
I love this served warm with full-fat natural or Greek yoghurt.
Step 8
Slice and store or freeze in an airtight container or bag.
Step 9
Defrost and reheat prior to serving (although I personally like this at room temperature with yoghurt too).
