Balsamic Cucumber Salad

cucumber,

How do you make the balsamic vinaigrette?  Sounds delish!

I loved this salad!!!  To make it a true Greek salad, I added pitted Kalamata olives.  I used chopped green onions instead of red because I prefer them.  The recipe had no vinaigrette recipe--my recipe is 1/4 c. extra virgin olive oil, 2T balsamic vinegar, 1 T honey, 1 t. dijon mustard, salt & pepper to taste.  I actually doubled the vinaigrette recipe so I would have extra to use for the next batch or for a salad.

I loved this easy fresh salad! I did add salt and pepper to taste and left out the feta cheese. If you like feta it would be delicious in it.

This is a wonderful light summer salad, and perfect to go along with any summer main dish. My husband and I very much enjoyed this and will be making this again and again. It would be perfect to bring to a potluck too.

This delicious salad is easy to make.  I'm not fond of red onions, used Vidalia.

Love this salad!  It's quick and easy to prepare and oh so yummy.  I make my own balsamic vinaigrette dressing very similar to the last reviewers recipe (using white balsamic vinegar).

I make this often and use red onions.Many types of onions are sweet if you know how to pick them out.I look for flattened orbs for the most sweetness. : )

This is a WONDERFUL recipe, easy and delicious. Plus, I added olives, as another commenter suggested, along with fresh thyme to make it even better!  :)

I peel most of the skin, cut lengthwise twice intoquarters, then 1/2 inch chunks. Much easier to gracefully eat than a slice. I also marinate in balsamic, a little water & fresh ground pepper for a day or two. Great for a healthy snack, too!

Easy and delicious! Especially yummy with garden fresh cukes, tomatoes, and walla walla sweet onions.
