In a hurry? These satisfying quesadillas take just 15 minutes to make. We like them with black beans, but pinto beans work well too. If you like a little heat, be sure to use pepper Jack cheese in the filling. Serve with: A little sour cream and a mixed green salad.

Black Bean Quesadillas

black beans,

Monterey Jack cheese, preferably pepper Jack

prepared fresh salsa (see Tip), divided

whole-wheat tortillas

canola oil, divided

avocado,

Combine beans, cheese and 1/4 cup salsa in a medium bowl. Place tortillas on a work surface. Spread 1/2 cup filling on half of each tortilla. Fold tortillas in half, pressing gently to flatten.


Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Add 2 quesadillas and cook, turning once, until golden on both sides, 2 to 4 minutes total. Transfer to a cutting board and tent with foil to keep warm. Repeat with the remaining 1 teaspoon oil and quesadillas. Serve the quesadillas with avocado and the remaining salsa.


Super versatile recipe. I drained but didn't rinse the beans, then did a rough mash on them. I stirred in about 3 tbsp of jarred salsa and then heated in the microwave for about a minute and a half. I sprinkled a bit of cheese on half the tortilla, then added the bean mixture. I also added about an once of cooked chicken, then sprinkled the remaining cheese on top. Could change things up by adding jalapenos or olives as well. Super delicious and very quick and easy to make!

I'd give it 5 stars with the changes I made.  I followed the suggestion to mash the beans.  I heated the beans with the 1/2 c. of salsa and added 1-2 t. of homemade taco seasoning.  I sprinkled cheese on one tortilla, spread the bean mixture over the cheese and then added more cheese and a second tortilla and pressed the tortillas together.  I served the quesadillas with guacamole and sour cream.

I make this weekly it is so easy and delicious. Makes great leftovers the next day (just heat them up in the microwave or toaster oven). I mash the black beans a bit before stirring in the cheese and salsa. This helps make the insides more manageable and keeps everything from falling out. A less fattening solution than adding more cheese. I also tend to use cheddar cheese instead of pepper jack and then make sure to use more spicy salsa to compensate. I always serve this with avocado--it really adds a lot of flavor.

Good not great.  I made it with Mexican 4 cheese and Pace salsa.  It was super easy, but didn't have much flavor.

I LOVE this recipe, especially because it is so fast and easy. I do warm up my beans to make them more tender. Either 2min in the microwave or the stove top medium heat. I can eat these any time of day but if I want it for breakfast, I pair it with a fried egg. Yumm.

This dish is very quick and easy to make! This week is midterms for me (college kid) and it's a quick enough meal for me to squeeze into lots of studying time. I've been trying to eat healthy but also on a budget, and I'm also a huge mexican food person so this was perfect! I didn't make any changes to the recipe, and it was great as is but next time I want to try adding some cumin to get a lil more mexican flavor. Will definitely make this again.

Easy and Delicious! 
I made these for the first time for my family last night and it was a huge hit! I followed according to recipe with the exception of salsa-we only had canned and it worked just as well. Fresh would probably taste good too but the flavor from the canned version tasted really good mixed with the beans. 
The fresh avacado is soooo yummy on top of it!
tip: use the smaller tortillas about 4-5 inch across for easy flipping. Also, make sure you don't use too much filling. It makes it hard to flip and it gets really messy.

Simple and delicious
Decided to try this recipe when my fridge was practically empty and didn't feel like going to the grocery store. While I didn't have avocado, I ate these with a side salad and they were so delicious and filling. My husband ate them after rugby practice and loved them - and neither one of us is vegetarian! Didn't even miss the meat. This will be my go to recipe when I want a meal in 10-15 minutes.

Nothing wrong with vegetarians, besides the whole not eating meat thing.  My modifications:
--brown 1/2 lb turkey sausage with a dash of crushed red pepper
--make bean mixture and toast in tortilla as directed
--open quesadilla, add one leaf romain lettuce, 1/4 turkey, thinly sliced tomato, mustard, and mayo

This solution added some sustenance, kick, and tang the original recipe just planned lacked.

Cons: Its vegetarian

Very Easy to Prepare
This was a quick and simple meal, and I love black beans. I added a little scallion, cumin and fresh tomato to my mixture. Mashed the beans a little. Not a big fan of avocado, so I didn't purchase any. I didn't miss it. Will definitely make again.

I made this recipe as stated except I left out the oil.  My family of 5 enjoyed it.   Like previous reviews I did mash up the black beans and avocado a little before mixing everything together, I then heated the mixture in the microwave for a minute to warm it up before putting it on the tortilla.  The tortillas I had on hand were little 6 inch carb balance tortillas and I divided the mixture in fourths with a a tortilla on top and bottom.  I did not cook the tortillas in oil, just put them in the pan and let them brown on each side.  Good, simple recipe.  Made again for lunch the next two days and I'm sure I'll be making it in the future soon.

I wasn't expecting to like these.  It's only five ingredients (I omitted avocado) for God's sake! But wow I really enjoyed these.  Maybe it's because of the black beans which I practically love in every dish.  I didn't rinse (but I did drain them) the black beans either so maybe that is why I had more flavor. I used Goya canned black beans and the whole wheat tortillas.  I used Chachi's medium pico de gallo (picked up in the refrigerated section of publix). Any how I devoured these.  I had one and a half tortillas...beyond the serving size.  I can see why someone wouldn't like these though.  Without the salsa they are a tad bit drier (texture wise) than the unhealthy white tortilla and there is a very unique taste from the whole wheat that can take some getting used to.  But once you pair the salsa on top nothing is missing. It is perfect!  The flavors absolutely burst. Could be the brand of salsa I used. I don't plan to used any other brand if I can help it.

Can't wait to warm up another one tomorrow.  I shouldn't have pre-made. I should have just kept the mixture in the bowl and made the tortillas as needed but it should warm up int the oven just fine.

I cook a big batch of beans of all varieties and keep them in 2 cup portions in the freezer so they are always available. I think they taste better than canned and it reduces the sodium.

I made these the other day and thought they were pretty good, but needed a little kick to them; any suggestions?




Since some other reviewers had trouble with the filling falling out, I pureed my beans with some fresh lime juice (and a chipotle pepper in adobo sauce, for kick!), then mixed that with the salsa and spread it on the tortillas, sprinkling the cheese in top. Worked like a charm! I also mashed the avocado with some lime juice and a dollop of sour cream to make more of a dip for the quesadilla wedges. YUM!



These quesadillas are surprisingly filling, but our family thought they were just okay.  They were easy and healthy though.

Very tasty and quick. I work from home and I made this in less than 15 minutes today for lunch. I made enough of the black bean mix to make tomorrow for lunch.
