Step 1

Place lemon zest into mixing bowl and grate 10 sec/speed 8.

Step 2

Scrape down sides of mixing bowl with spatula and repeat grating 10 sec/speed 8 until a fine consistency is achieved.

Step 3

Add all remaining reduction ingredients and cook 30 min/Varoma//speed 2, placing simmering basket instead of measuring cup onto mixing bowl lid.

Step 4

Strain through a fine-mesh sieve into a hot-rinsed sealable jar or bottle and seal. Allow to cool completely before placing into a cool, dark area to store until use. Clean and dry mixing bowl.

Step 5

Place onion, garlic, carrot, celery, bacon and olive oil into mixing bowl and chop 5 sec/speed 5.

Step 6

Scrape down sides of mixing bowl with spatula then sauté 3 min/Varoma/speed 1.

Step 7

Add beef and pork and cook 5 min/Varoma//speed .

Step 8

Add all remaining bolognaise ingredients and cook 8 min/100°C//speed , placing simmering basket instead of measuring cup onto mixing bowl lid.

Step 9

Serve immediately with fresh basil leaves to garnish (optional) or use as required in other recipes.
