This delicious recipe is courtesy of Stephane Reynaud and can be found in his cookbook "Pork and Sons."

Boston Butt with Milk

Boston butt (3 1/4 pounds)

milk

garlic

thyme

rosemary

bay leaves

Place pork in a large Dutch-oven. Add milk, garlic, thyme, rosemary, and bay leaves. Cover, and transfer to oven. Cook until milk comes to a boil, about 45 minutes. Uncover and continue cooking until milk is evaporated, about 1 hour and 15 minutes.

Discard herbs and serve pork hot or cold with milk sauce.

The video has you bring the milk TO A BOIL on the stovetop before putting pot in stove.  Printed recipe acccidentally omits this step but you DO need to do it! I read a few other recipes, turned out great. First put 1T oil in pan, then brown meat on all sides (7-10 mins). Trasfer meat to plate, and toss herbs into oil for 30 secs, then add 1qt milk, BRING TO BOIL, add meat and transfer to oven. 1.25 hrs uncovered, then 45 mins uncovered. LOOKS curdled, that's normal. Delish + easy.

I just made this. It is just okay. I won't make it again. I tested the meat for doneness and think I got lucky because it was tender but way too fatty and it didn't brown like the picture.

Stay away from this one. In fact, Martha, this recipe should be removed from the site. I brought the milk and meat to a boil on the stove then put it all in the oven. After two and a half hours, only about one cup of the milk had evaporated. In the end, I had probably the stickiest, grossest mess ever. I have just finished trying to clean the pot for the third time--after a week of soaking in soapy water. Avoid this recipe. Yuck.

I tried the recipe 3 times and the milk sauce did not turn out like the picture. The milk sauce curdle. Too high heat?  I used 2X more thyme and rosemary as indicated in the recipe and I marinate the pork butt with salt and pepper overnight in the refrigerator.  I like the roast, but just wish the sauce turns out better.

It works, I threw everything into the dutch oven and brought it to a boil on the stove. Left the dutch oven covered and threw it into the oven for 45 minutes. Removed the cover and let it cook for the remaining 1 hour and 15 minutes. Looked like the video.

We just di dthis recipe....disaster. I then watch the video and find out that the recipe is nothing like the way it was prepared on the show. Can you please update the recipe so we can try it again .....as cooked on the show.

The video and the instructions don't Match.  The video seems to boil the milk on the stove and then uncover and transfer to the oven for 2-2.5 hours.  The instructions say cook in oven til milk boils (about 45 minutes) then uncover and cook for 75 more minutes.  Also the video suggests using whole milk.  At 45 minutes in my oven the milk was only at 180 degrees it took 15-20 minutes more to bring to a boil and and after more than 1 hour 45 the milk was still not evaporated.
