Step 1
Add the Italian seasoning, garlic powder, salt, and pepper to a small bowl. Mix to combine. Season the chicken breasts on both sides with the spice mixture.
Step 2
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side until browned and cooked completely. Top each chicken breast with a slice of mozzarella cheese during the last minute of cooking.
Step 3
While the chicken cooks, make the bruschetta topping. Combine the diced tomatoes, red onion, garlic, basil, olive oil, balsamic vinegar, salt and pepper in a medium bowl. Mix well and set aside.
Step 4
For the balsamic glaze, add the balsamic vinegar and brown sugar to a small saucepan. Bring to a boil. Then, reduce the heat and simmer for 8-10 minutes until thickened and syrupy.
Step 5
Top each chicken breast with a generous spoonful of the bruschetta mixture. Drizzle with the balsamic glaze. Garnish with additional fresh basil if desired. Serve immediately.
