Step 1
If the wings are not already pre-cut, straighten out the wing, and cut the wing at each joint. You can save the wing tips for chicken stock.
Step 2
Heat vegetable oil in a large heavy-duty pot or deep fryer to 350°F.
Step 3
Deep-fry the wings for 8 to 10 minutes. The chicken will be done when the internal temperature is 165°F and the juices from the chicken should be clear.
Step 4
Drain chicken wings on a wire rack over a baking sheet.
Step 5
While you fry the chicken wings, prepare the Buffalo sauce.
Step 6
Place butter in a saucepan over medium heat.
Step 7
When the butter has melted, pour in the hot sauce and whisk well. Cook until the mixture starts to bubble, whisking constantly. Remove the sauce from the heat.
Step 8
Whisk in the remaining sauce ingredients, be sure to whisk constantly for 2 minutes to cook the egg yolk but prevent it from scrambling.
Step 9
Place the fried wings into a large bowl and pour the sauce over the wings.
Step 10
Toss until all of the wings are coated.
Step 11
Serve with either ranch or blue cheese dressing.
