Melt the butter in a small sauce pan over medium heat. Add the cream and milk and bring to a simmer, stirring occasionally, being sure that the mixture doesn't boil over. Simmer until slightly reduced, about 2 minutes. Season with salt and pepper. The sauce can be made up to 2 hours ahead, kept at room temperature.
