Step 1

Thoroughly wash carrots under cold water and peel them using a vegetable peeler. Remove any blemished areas.

Step 2

Shred the carrots using a box grater or food processor until you have about 4 cups of grated carrots.

Place raisins in a bowl, cover with warm water, and soak for 10-15 minutes. Drain and pat dry with a paper towel.

Chop apples into small pieces and coat with lemon juice to prevent browning.

Chop walnuts into small pieces.

In a separate bowl, mix 1/2 cup mayonnaise, 1/4 cup plain yogurt, 1 tablespoon honey, and a pinch of salt.

In a large mixing bowl, combine grated carrots, soaked raisins, chopped apples, and walnuts.

Drizzle the prepared dressing over the salad mixture and fold it in using a spatula.

Step 9

Gently toss the salad to mix all ingredients thoroughly. Let it sit for 10-15 minutes to allow flavors to meld.

Step 10

Adjust seasoning if needed and garnish with additional raisins, chopped parsley, or orange zest if desired. Serve chilled.
