Preheat oven to 200C/180C fan forced. Lightly grease a 2.5L or 10 cup capacity oven dish.

Arrange half the potatoes in the dish. Combine the thickened cream, sour cream and chives in a large jug and season with salt. Pour half over the potatoes, season with fresh;y cracked black pepper and scatter over half the tasty cheese. Top with remaining potatoes, pour over remaining cream mixture and season again with freshly cracked black pepper. Cover with foil and bake for 60 minutes.
Step 3
Remove foil and scatter remaining tasty cheese and parmesan over the bake. Cook for 20-25 minutes or until bubbling and golden. Scatter over extra chives and leave to cool for 5 minutes before serving.
