Step 1

Preheat oven to 425° F

Step 2

In a saucepan, add carrots, chicken, celery, and peas.

Step 3

Add enough water to cover, bring to a boil and cook for 15 minutes.

Step 4

Using a colander, drain off the water, leave in colander, and set aside for later.

Step 5

In a the saucepan, add butter, and onions. over medium heat, cook onions until translucent and tender.

Step 6

Stir in the celery seed, salt, pepper, and flour.

Step 7

Using a wire whisk, slowly whisk in the milk and chicken broth.

Step 8

Reduce heat and simmer until thickened. Remove pan from heat and set aside for later.

Step 9

In the pie crust, add prepared chicken mix on the bottom.

Step 10

Add gravy mixture by pouring over the top of the chicken mix.

Step 11

Place the crust top over the pie, pinch the edges to seal. Trim any excess dough. Using a knife, make slits in the top to let steam release.

Step 12

Bake in preheated oven for 30 - 35 minutes or until golden brown.

Step 13

Remove from oven and let sit for approx 10 minutes.
