Step 1

Boil diced and peeled potatoes until barely tender. Drain and set aside in a colander.

Step 2

In a small bowl, combine the seasoning mix.

Step 3

Rub the chicken breasts thoroughly on both sides with HALF of the mix.

Step 4

Preheat electric skillet or a large stove skillet to 350 degrees.

Step 5

Add butter and oil.

Step 6

When its hot, add the chicken and cook thoroughly, turning once.

Step 7

Remove chicken and keep warm.

Step 8

Gently toss potatoes with the remaining seasoning mix until evenly coated.

Step 9

Reheat skillet to 375 degrees.

Step 10

Add potatoes and cook until brown and lightly crisp, stirring occasionally.

Step 11

Stir in the green onions and cook for 1 minute.

Step 12

To serve, place some potato mixture on plates, top with a piece of chicken and spoon 1/4 cup Bearnaise Sauce over all.

Step 13

If prepared ahead (you can make one day early), place potatoes in an attractive dish, top with chicken, cover and refrigerate.

Step 14

When ready to serve, preheat oven to 350 degrees, uncover dish and heat for approximately 30 minutes.

Step 15

Warm sauce slowly. Serve with cornbread and green beans.
