Step 1
Whisk together the dry ingredients.
Step 2
Whisk in the plant milk extremely thoroughly, making sure to scrape the bottom and sides until completely mixed.
Step 3
Heat a large non-skillet pan to medium-low heat. Pour in half the batter to make two smaller omelets or all of it for one big omelet. Cook until the sides are firm and bubbles coat the top, about 3 minutes.
Step 4
Very carefully scrape the sides with a spatula gently nudging towards the center, shake the pan a bit to get it loose. It is optional to cook both sides, but not necessary.
Step 5
Slide onto a plate and fill with your preferred vegetables.
