Hazelnut meal is available in major supermarkets. It can also be made at home if you like. I roast 1 cup of hazelnuts in the oven at 180°C/350°F (fan forced) for approx 10 minutes until golden (keep an eye on them, shake the tray after about 8 minutes). Rub the cooled nuts in a tea towel to remove most of the skins. In a high speed blender/ food processor/ Thermomix, blitz the nuts for 10-15 seconds to grind to a meal. Store in an airtight container in the freezer to keep fresh.
