Step 1
Preheat the oven to 325 degrees. F. and light a 13x9” baking dish with non-stick baking mix; set aside.
Step 2
In the base of a stand mixer fitted with the paddle attachment, beat together the 3/4 C. butter, 1/2 C. sugar, and 1/2 C. sweetener until light and fluffy.
Step 3
Add in the eggs one at a time along with the 1 1/2 Tsp. vanilla. Beat together until well combined.
Step 4
Mix in the 2 C. flour and 1 Tsp. baking powder until the dough starts to come together.
Step 5
Add in the 2 C. cookies and 1/4 C. sprinkles and stir until just combined.
Step 6
Do not over mix or the sprinkles will bleed their color out into the dough!
Step 7
Transfer the dough to the prepared baking dish and smooth out.
Step 8
Place the dish in the oven to bake for about 30 minutes or until the edges are browning and the middle is set.
Step 9
Once done, remove from the oven and set aside to cool for about 15 minutes before slicing into # pieces to enjoy right away.

Sore leftovers covered in a dry place for 3-5 days.
