Step 1
Soak cedar planks 30 minutes in water. Preheat grill to medium-high.

Meanwhile, in a medium saucepan whisk together citrus juices and zests, apricot preserves, garlic and soy sauce.
Step 3
In a small bowl, whisk together cornstarch and water. Slowly stir into marinade and bring to a boil over medium-high heat until mixture starts to thicken. Remove from heat.
Step 4
Lay salmon skin side down on cedar planks (or well oiled grill) and season with salt and pepper. Brush half of marinade onto tops of salmon and grill 12 - 15 minutes.
Step 5
Transfer salmon to plates and brush with reserved marinade on top.
