Step 1

Heat broiler with oven rack 6 inches from heat source. Line rimmed baking sheet with aluminum foil.

Step 2

In large bowl, whisk together peanut butter and peanut butter powder, lime juice, soy sauce, honey, ginger, and 1 tablespoon warm water. Transfer half to second bowl, add chicken, and toss to coat. Transfer chicken to prepared baking sheet, spooning any extra sauce in bowl on top. Broil, undisturbed, until chicken is cooked through and charred in spots, 9 to 11 minutes. Transfer to cutting board and let rest 10 minutes before slicing.

Step 3

Meanwhile, to remaining dressing, add collards and massage until collards begin to soften and look slightly shriveled, about 2 minutes. Add carrots, edamame, and half of peanuts and toss together. Serve alongside chicken, sprinkled with remaining peanuts and lime zest.
