Step 1
Combine all ingredients except the turkey leg in a large stock pot.
Step 2
Add enough water to cover the greens. Add the turkey leg.
Step 3
Bring to a boil over medium high heat. Reduce heat to low, cover and simmer for 2-3 hours.
Step 4
Remove the turkey leg during cooking, remove meat, cut into bite sized pieces, and add back to the greens for the remainder of cooking time.
