Cool Beans Salad

olive oil

red wine vinegar

sugar

garlic clove,

salt

cumin

chili powder

pepper

basmati rice

(16 ounces) kidney beans, rinsed and drained

(15 ounces) black beans, rinsed and drained

corn,

green onions, sliced

sweet red pepper, chopped

cilantro

Easy to put together, even better the next day.  I used white wine vinegar, low sodium versions of the beans, and parsley instead of cilantro.

Very good! I usually stick to a new recipe exactly as written but due to what I had on hand and health reasons I omitted the salt and sugar, used maybe 2 T olive oil (no reason for it to swim in oil) and a tablespoon dried cilantro. Not a fan of peppers so used 1/4 of a large red pepper. The red pepper taste did not overpower the salad so I added more the next day. This is a nice addition to my bean salad recipes and I actually like the red pepper in it for a change. Will be using this recipe a lot.  Thank you so much for sharing it!

Excellent! We paired it with TOH's Sizzle & Smoke Flat Iron Steaks. It was better than eating at Chipotle!

I really, really wanted to like this recipe since I love 3 bean salad, but for me, it was just flat.  Not bad, just plain.  I would like it better with less rice and more pizazz in the dressing.  I’ll try again and modify a bit.  Thanks for the recipe inspiration.

I am always looking for recipes for meatless meals.  This salad is perfect.  It is delicious and healthy, a real keeper.

It's like a meatless burrito bowl with a great blend of flavors, colors and textures.  It's pretty darn healthy and easy to make.  The recipe produced 10 servings (not 6) for my wife and me.  We substituted frozen peas for the corn and stevia for the sugar.

Delicious! Best served chilled. I could see this with many other veggies added or substituted.

I decided to try it warmed up in the microwave, and it is just as delicious warm as cold.  This is one of my favorite recipes of all time.

I make this salad several times each summer. It goes well as a side for a cookout, whether with hamburgers, grilled chicken, or ribs. It tastes very fresh and healthy. Everyone loves it and can't get enough of it! It's great even by itself? .

I have made quite a few great ToH recipes, but I think this one might be the best!  I could see taking this one to a carry-in. It is a full one dish meal, easy to make and so delicious it went on our regular summer rotation after one tasting. It makes plenty for 4 plus a bunch of lunch leftovers. I decided to use 1/3 cup of oil, extra cilantro and chili powder. Also I use Trader Joe's frozen roasted corn, as it adds extra flavor. You could also make a modified version of this using all pantry ingredients that would require minimal or no cooking for a power outage meal. Thank you for a perfect recipe.

Since I found this recipe, it's a staple in my house. We keep it in the fridge all the time. As yet, we haven't tired of this.

My husband and I both love this as a main dish.  I whisk the dressing ingredients in a small bowl then mix the salad ingredients in large bowl and pour the dressing over and mix.  I also add celery, carrots and other crunchy veggies I have on hand.

This is one of our all-time favorite cold savory recipes. Cheap, filling, plentiful, and delicious.

Still not over the celebration that had occurred in my mouth.

This is an excellent high protein dish. My daughter who recently moved out asked for the recipe.  The only thing is the sauce gets soaked in and it can become dry. I fixed that by making a double batch of the sauce and put half in a jar in the fridge. When it started getting a little dry i would add a little more sauce. I have made this several times and it is a winner for my family.
