1 Prepare the ingredients & make the base Place an oven rack in the center of the oven; preheat to 400°F. Wash and dry the spinach. Lightly coat the tray with a drizzle of olive oil. Return to the oven and bake, uncovered, 6 to 8 minutes, or until the pancetta is cooked through and the cheese is melted. Remove from the oven. Let stand at least 3 minutes before serving. Serve the baked tray garnished with the parmesan. Enjoy!
