Bring the milk to a boil with 2 lemon rinds. Beat the egg yolks with the sugar and flour. Strain the hot milk directly into the egg yolks, then place everything back into the saucepan and cook for 2 minutes while stirring.

Step 2

Turn off the heat and let it cool, covered with plastic wrap or parchment paper directly in contact with the pudding. Serve the pudding on its own or add toppings: crumbled cookies, amaretti, cornflakes, dried fruit, blueberries, or other fresh fruit.
