Label your freezer bag with the name of the recipe, cooking instructions, and “use-by” date. (Three months from when you prepped the meal.)
Step 2
Add all the ingredients except the mozzarella to the bag.
Step 3
Carefully remove as much air as possible, seal and freeze for up to three months.
Step 4
Defrost the meal in the refrigerator overnight.
Step 5
Preheat the oven to 425˚. Pour the contents of the bag onto a parchment-lined sheet pan and roast for about 30 minutes or until the pancetta is browned and sizzling and the gnocchi are crisped. Stir. Sprinkle the mozzarella on top and return the pan to the oven until the cheese is melted, 5 minutes.
