Step 1
Preheat the oven to 450°F (230°C). Break the cauliflower into florets, slicing larger pieces in half.

In a large mixing bowl, toss the cauliflower with 6 tbsp olive oil until evenly coated.

Sprinkle with ½ tsp Old Bay seasoning, ¼ tsp chili pepper, and a generous amount of fresh ground pepper. Toss again to coat, then repeat the seasoning for an even distribution.

Arrange the seasoned cauliflower on a foil-lined baking sheet, ensuring the pieces are spread out without overlapping. Place sliced florets flat-side down for even roasting. Bake on the top rack for 15 minutes.

While the cauliflower roasts, grate the sharp white cheddar and parmesan cheeses.
Step 6
Once the cauliflower is nearly done, remove it from the oven. Sprinkle the grated cheese evenly over the florets. Return the cauliflower to the oven and bake for an additional 7-10 minutes, or until the cheese is golden and crispy.
Step 7
Using a spatula, scrape up the crispy cheese from the pan as you transfer the cauliflower to a bowl. Serve and enjoy!
