Step 1
Preheat your oven to 400˚F. Brush a large baking sheet with a light layer of olive oil (don't skip this or your quesadillas won't be crispy).
Step 2
Heat a large pan on medium heat. Add a splash of olive oil and let it heat for about a minute. Add the chopped broccoli and diced onion. Add a pinch of red pepper flakes. Add salt and pepper to taste. Stirring occasionally, cook for 5-7 minutes until the broccoli is bright green and the onions have softened.
Step 3
Add half a cup of cheese to one side of each tortilla. Top with a third of the cooked broccoli mixture. Top with another half a cup of cheese.Close the quesadilla and brush the top with olive oil. Repeat with all three tortillas.
Step 4
Bake for 8 minutes. Carefully flip and bake for another 8 minutes until quesadillas are crispy and the cheese is melty.
Step 5
Serve with sour cream and hot sauce (my favorite!) or any dip you'd like.
