Step 1
Cut the pork tenderloin in half lengthwise. Place it in between plastic wrap and use a meat mallet to gently pound the pork until it’s approximately 1/2 inch thick.
Step 2
Whisk together the remaining pork ingredients. Place the pork in a ziplock bag and pour the marinade on top. Marinade for at least 30 minutes.
Step 3
Preheat a grill over medium high heat (approximately 350 degrees Fahrenheit) and rub the grill grates with oil.
Step 4
Grill the marinated pork for 4-5 minutes per side until cooked through (internal temperature of 145 degrees Fahrenheit).
Step 5
Remove the pork from the grill and let it rest for 5 minutes. Then slice the pork against the grain into approximately 1/8 inch thick slices.
Step 6
Reduce the heat to low on the grill.
Step 7
Cut the bread in half lengthwise. Spread the mustard on the bottom half of each of the bread.
Step 8
Layer the cheese, ham, pickles, salami and pork onto each roll. Alternate between the meat and cheese as the cheese helps keep the sandwich tomorrow. Then top each sandwich with the top half of the rolls.
Step 9
Rub the melted butter on the outside of the sandwiches.
Step 10
Place the sandwiches on the grill. Place a piece of foil on top and then place a heavy item on top of the foil to press the sandwiches down onto the grill. I used a large cast iron skillet and it worked great.
Step 11
Grill for 5-6 minutes. Flip the sandwiches, weigh them back down and grill the opposite side for 5-6 more minutes until browned and the cheese is melted.
Step 12
Remove the sandwiches from the grill and then they are ready to serve and enjoy!
