Step 1

Prep all your ingredients.

Step 2

Start by washing the kale and chop it into small bite pieces. Cut the tomatoes in halves and set aside. Peel carrot and use the peeler to create ribbons.

Step 3

For the pickled onions, simple thinly slice the red onions, add the juice of 1/2 lemon and 1/2 tsp os salt, cover and let it sit for 10 minutes.

Step 5

In a salad bowl, add the chopped kale, then add 1 TBSP of dressing and mix or massage the kale with the dressing.

Step 6

Then add a layer of brown rice, a layer of carrots and tomatoes, then the lentils and top off with pumpkin seeds, parsley, pickled onions and a drizzle of dressing.
