Step 1
In a bowl combine flour and baking powder. Mix to blend and set aside.
Step 2
In a large mixing bowl whisk together butter and brown sugar for 1 minute. Add the orange zest and vanilla and mix again.

Add the egg and whisk again until smooth.
Step 4
Gradually add the dry ingredients. Stir gently with a wooden spoon until all the flour is combined.

At the end add the dried fruits, folding them into the mixture until incorporated.
Step 6
Make a ball out of the dough. Cover the bowl with cling film and transfer it to the fridge for 30 minutes to 1 hour.
Step 7
Adjust the oven rack above the middle position. Preheat the oven to 360º F/ 180º C. Line two large baking tins with sheets of parchment paper.
Step 8
Take pieces of dough as big as walnuts and roll them in your hands into balls. Press them gently to make them flat.
Step 9
Arrange the cookies into the prepared tins. Consider that they will spread so leave some distance between them.
Step 10
Bake for about 10 minutes or until the bottom edges start becoming golden brown. The cookies will be very soft when you remove them but that is ok. Let them cool 10 minutes on the sheet and then transfer them to a wire rack to cool completely.
