Strain the watermelon puree with a fine, mesh strainer.

Combine sugar and water in small saucepan and bring to a boil.

Continue boiling briefly, until all sugar crystals are dissolved.
Step 6
Allow to cool completely.
Step 7
Combine the cooled sugar water with watermelon purée, lime, and vinegar. Skim off any foam from surface.
Step 8
Cover and let rest in refrigerator for at least 2 days.
