Step 1
Transfer the roast from the refrigerator about 60 minutes before cooking.

Preheat the oven to 325 degrees F.

Season the roast with the salt and the pepper.

In a very large skillet, heat the oil over medium-high heat.

Add the roast to the hot oil and brown on all sides, about 2-3 minutes per side.

Transfer the roast to a wire rack on a baking sheet.

Bake the roast for approximately 25-30 minutes for every pound of meat, removing the roast from the oven when it's approximately 10 degrees shy of medium doneness, which is about 145 degrees F (the roast will continue to cook while it rests). For a 3-pound roast, cook for about 1 hour 15 minutes.
Step 8
Let the roast rest for at least 15 minutes, tented in aluminum foil to keep warm.
