Place the jicama in a microwave-safe bowl with water. Microwave for 6 minutes. Alternatively, you can pour boiling hot water over the fries in a large mixing bowl and let set for 10 minutes. Drain.

Step 6
Pulse until the mixture is chopped.
Step 7
Add the olive oil and puree until consistency is smooth, about 1 minute.
