Pop the oven on to 180°c

Place a non-stick cooling rack on top of a baking tray (you can line the baking tray with baking paper if you don't want to have to spend to long on clean up)

Place the chicken into a bowl then add the mayo. Smear the mayo liberally over the chicken
Step 4
In another bowl add the bread crumbs and spice blend mix well to combine
Step 5
One at a time press the breadcrumb mix onto the chicken to coat all over.
Step 6
Place each crumbed piece of chicken onto the cooling rack and when they're all coated pop in the oven. For drumsticks, they'll take around 40 mins but it depends on how cold they are, how hot your oven runs and how big your drumsticks are. Check at 30 mins and give them longer if the juices don't run clear.
