Step 1
Heat up your smoker to 225°F with your choice of wood. Personally, I recommend maple.
Step 2
While the smoker heats up, trim the fat on your pork.
Step 3
Apply your chosen rub liberally across the loin.
Step 4
Once your smoker has reached 225°F, place the meat in the smoker.
Step 5
Smoke for 2.5-3 hours, or until the meat reaches an internal temperature of 145°F.
Step 6
With about 30 minutes left, apply BBQ sauce to the meat.
Step 7
Finish smoking, remove from smoker and leave to cool for 15-20 minutes before slicing and serving.
