Preheat the oven to 350°F.
Step 2
If desired, intensify oat flavor by toasting oatmeal on a cookie sheet, just until you can begin to smell it. Remove from oven and cool.

Meanwhile, whisk together flour, sugar, baking soda, and salt. Cut in butter until it resembles fine crumbs.
Step 4
Add oats, then stir in the yogurt until a soft dough forms. You may need to add a tablespoon or so of milk, just enough to bring the dough together. The dough may be a little crumbly.
Step 5
Knead for about 30 seconds, pat into a ball, and with your hands, flatten into a round on a cookie sheet. The thinner your dough, the crisper the end result.
Step 6
Cut into 16 wedges, but leave together and bake until set.
Step 7
Re-cut wedges, and slide apart enough so the edges can brown as well.
Step 8
Return to oven and bake until light brown and crispy (perhaps 25 minutes total baking time).
Step 9
Cool on a rack.
