Step 1
Preheat your waffle maker or "chaffle" maker. Using a basic round mini waffle maker like the Dash brand, lightly grease or spray the plates with cooking spray to prevent sticking.

Crack one large egg into a small mixing bowl and beat lightly with a fork. Add two tablespoons of shredded mozzarella cheese to the beaten egg. Stir to combine.

Add two tablespoons of unsweetened cocoa powder. Stir until thoroughly blended into the egg and cheese.

Measure two tablespoons of Lakanto Monkfruit sweetener powder and stir into the mixture to combine. Then, add one teaspoon of coconut flour and stir until there are no lumps.

Add the rest of the ingredients and stir until combined.
Step 6
Carefully spoon half the batter onto the bottom cooking plate of your preheated waffle maker. Close the waffle maker gently and cook the chaffle for 4 minutes.
Step 7
Carefully remove the cooked chaffle and repeat to cook the second chaffle with the remaining batter. Serve warm with sugar-free whipped cream or ice cream if desired.
