Step 1
Place coriander into mixing bowl and chop 3 sec/speed 5. Place in a bowl and set aside.
Step 2
Place garlic into mixing bowl and chop 3 sec/speed 6. Scrape down sides of mixing bowl with spatula.
Step 3
Add ghee and nigella seeds, then cook 1 min/100°C/speed 1. Place in a separate bowl and set aside. Do not clean mixing bowl.
Step 4
Grease a large bowl with oil and set aside.
Step 5
Place milk, yoghurt and yeast into mixing bowl, then heat 2 min/37°C/speed 1.
Step 6
Add all remaining naan ingredients and mix 20 sec/speed 3 then knead Dough /2 min. Place dough onto a silicone bread mat or floured work surface and shape into a ball. Place dough in prepared bowl and turn to lightly coat in oil. Cover bowl with plastic wrap and leave dough to prove in a warm place until doubled in size (approx. 1-2 hours).
Step 7
Preheat pizza oven to 350°C.
Step 8
Place dough on a silicone bread mat or floured work surface and divide into 10 equal portions (approx. 80 g each). Gently work each piece into a ball and then using the heel of your hands, gently stretch into an oval shape (approx. 15 x 10 cm). Lightly dust each naan with flour.
Step 9
Turn pizza oven flame down to the lowest setting. Using peel, slide one naan into the front third of the pizza oven and cook for approx. 2 minutes, turning as needed. Remove naan from heat and brush with reserved ghee and garlic mixture, then sprinkle with chopped coriander and extra salt (optional). Place on a serving dish and cover to keep warm, while cooking the remaining naan. Serve warm.
