Step 1
Cook pasta according to package instructions. Reserve a half cup of pasta water, if needed. Drain well then set aside.

Heat a large pan over medium heat. Add one tablespoon of oil and allow that to heat up.

Add the shallots and sauté for about a minute or two, until they start to become translucent. Add the garlic and sauté for another 30 seconds, until fragrant.
Step 4
Pour in the rest of the oil and the tomato paste. Mix that together and continue to cook until they are combined, about 3-5 minutes.

Add in the vodka sauce. Stir together for about 2-3 minutes, until it no longer smells like alcohol.
Step 6
Pour in the heavy cream and parmesan cheese, stirring to combine. Reduce the heat to low and allow it to simmer for 4-7 minutes, until thickened.
Step 7
Add in the pasta and stir to combine. If needed, slowly stir in the pasta water.
Step 8
Sprinkle with crushed red pepper, salt, pepper and parsley, mixing to evenly distribute.
