Prepare the salmon by removing any pin bones and cutting it in half.

Step 2

Make a filling by mixing softened butter with lemon zest, basil, dill, salt, and pepper.

Step 3

Season the salmon fillets, spread herb butter on one fillet and mustard on the other, then sandwich them together.

Step 4

Roll out pastry, enclose the salmon in it, and brush with egg. Bake at 200°C/400°F for 20-25 minutes.

Step 5

Let the salmon rest for 5 minutes, then cut into portions and serve with hollandaise sauce, new potatoes, and vegetables.
