Step 1
In a large skillet sprayed with Pam, cook the bacon until crisp. Remove it to a plate lined with paper towels to cool and discard the bacon grease.
Step 2
Add the ground beef and chorizo to the pan and cook until browned, and season with salt and pepper.
Step 3
Spray your crock pot with Pam and add in the prepared diced onion, carrot, jalapeno peppers, bell pepper, and garlic. Toast the chili powder, paprika, red pepper flakes, cayenne pepper, chipotle pepper, and cumin in a small frying pan for about 5 minutes until fragrant, and add them to the crock pot as well. Then add in the cooked beef and chorizo.
Step 4
Add in the cocoa powder, beer, chicken broth, lime juice, cinnamon stick, bay leaves, tomatoes, and tomato paste to the crock pot. Give everything a good stir to make sure that it's combined, and turn on low for 6 hours or on high for 3 hours, allowing all of the flavors to come together.
Step 5
About an hour before you want to eat, rinse and drain your beans and add them to the crock pot and stir. After an hour, check the chili for seasoning and adjust as necessary. Enjoy with sour cream, cheese, cilantro, or fry an egg and serve that on top (this is my favorite way to eat most anything, chili included).
