Step 1
Wash, peel and chop the potatoes. Then place them in a large pot and cover them with water and a dash of salt. Place the pot on the stove and turn the burner to high. Let the potatoes cook for 20-30 minutes (they should be boiling by the end). You'll know they are done once a fork can easily pierce a potato.
Step 2
While the potatoes are cooking, preheat the over to 400 degrees F. Start off by heating the olive oil in a large skillet on the stove. Add the onion and cook for about 3 minutes.
Step 3
Then add in the ground turkey and continue breaking it into small pieces as it cooks.
Step 4
Once the turkey is fully cooked, add in the frozen mixed vegetables, tomato paste, 1/2 cup chicken broth, and worcestershire sauce. Thoroughly mix together and cook for about 5 more minutes. Then pour the mixture into the bottom of a glass baking dish.
Step 5
Once the potatoes are done cooking, drain them and put them back in the same pot. Add the remaining 1 cup of chicken broth and mix them either with a potato masher or a hand mixer.
Step 6
Scoop out the mashed potatoes and spread them in an even layer on top of your turkey mixture. Place in the oven for 30 minutes.
