Step 1
Preheat the oven to 375 degrees. Spray cooking spray on a baking sheet.
Step 2
Mix together: oats, flours, honey, baking soda, cream of tartar and salt. Cut in butter using 2 knives or with a pastry cutter.
Step 3
Beat egg in with the milk. Slowly add to the dry mixture, mixing while adding. Once the dough is well mixed, turn it out onto a counter top with flour. Sprinkle more flour on top.
Step 4
Knead dough lightly, until you've managed to shape it into a nice circle. {About 7" in diameter} The dough is sticky, so you don't want to knead it a ton or you'll have to keep adding flour, which will dry out the bread. This whole process of kneading and shaping shouldn't take more than a couple minutes.
Step 5
Transfer bread to the cookie sheet. Cut 2 quick lines in the top of the bread in an X shape. Brush bread with a little milk and sprinkle with additional oats.
Step 6
Bake in a 375 degree oven for 35-50 minutes, or until a toothpick inserted in the center comes out clean. ENJOY!
