Step 1
To Thaw: Place your frozen Ocean Perch fillets in the refrigerator the night before you plan to cook them. This will allow plenty of time to unthaw.
Step 2
If you are short on time and need to thaw your Ocean Perch fillets in a hurry, place your frozen fillets still in the sealed packaging into a bowl. Fill the bowl with water that is slightly colder than room temperature - you don’t want water that is too cold, this will slow the thawing process, but you don’t want hot water, as that will degrade the fish texture. After filling the bowl with water, make sure the fish is submerged, if the fillets float, place a smaller bowl or plate on them to keep the fillets submerged. Add new water every 20 to 30 minutes until your fish is fully thawed.
Step 3
To Pan-Sear: Start by heating your olive oil or butter in a large skillet over medium-high heat.
Step 4
Then season fish with salt, pepper, and thyme to taste. Add Ocean Perch to skillet, cook for about 3 minutes each side until cooked through.
Step 5
While cooking, add zest of lemon. When finished cooking, squeeze the juice of lemon wedge over the fillet.
