Step 1: Melt your white and dark chocolate in separate bowls and set aside.

I recommend doing this on the stove top with a double boiler, or placing the chocolate in a heat safe bowl that has an edge that will fit on top of a pot with a small amount of water in it. Do not place the bowl directly in the hot water below. Turn the stove onto medium heat, and wait for the chocolate to start to melt via the steam from the water below. As soon as it begins melting, stir the chocolate continuously. When you see that 80% of it's melted, remove it from heat with a heat safe glove and finish stirring it away from the heat. The hot chocolate will be enough to finish melting the rest, and will prevent it from over cooking or clumping.

Step 2: Pour the melted chocolate into your lollipop molds.

Step 3: Add your lollipop stick.
Step 5
Place your lollipop stick about 1/3 of the way into the lollipop and turn it to coat it in chocolate. This will help it stick to the chocolate better. If the lollipop stick is not totally covered, then add a little bit more chocolate to the mold so that it is.

Step 4: Add sprinkles or other toppings. (optional)

Step 5: Place in the refrigerator for 4 hours, or until chocolate is solid.

Step 6: Remove lollipops from the molds.

Be careful to remove the chocolate portion by pushing through the back of the mold, rather than by pulling on the lollipop stick.

Step 7: Wrap and Tie.

Cover the chocolate lollipop with a cellophane bag and tie with a ribbon. If you are adding a tag with a note on it, first punch a hole in the tag and attach it to the ribbon before tying it around the cellophane bag.
