Step 1
Using cooking spray, grease a 6 cup bundt pan.
Step 2
Combine flour, sugar, cocoa powder, baking soda and salt in a large bowl.
Step 3
Add oil, vinegar and vanilla to the dry ingredients. Using a spoon, mix well.
Step 4
Add water to the combined ingredients. Stir till batter is smooth.
Step 5
Pour cake batter into greased 6 cup bundt pan.
Step 6
Cover top of bundt pan with a sheet of aluminum foil. Place bundt pan onto Oxo sling or use trivet with aluminum foil sling. To make foil sling, take a long piece of foil and fold into thirds, lengthwise. Then take foil sling and place bundt pan on top of it. First, place trivet in inner pot of Instant Pot. Then you can lower bundt pan with the foil sling. The foil sling will act as handles to assist with removing the bundt pan out of the pressure cooker.
Step 7
Place trivet in inner pot if not using OXO sling.
Step 8
Pour 1 ½ cups of water into the inner pot of the Instant Pot.
Step 9
Lower bundt pan into Instant Pot.
Step 10
Lock lid onto Instant Pot. Set valve to sealing.
Step 11
Press the manual or pressure cook button then set for 30 minutes at high pressure.
Step 12
Once the timer is completed, release the steam using a quick release. When all the steam has been released and the float valve has completely dropped, remove lid. Take bundt pan out. Remove foil cover. Test the cake using a tooth pick to make sure it is done.The toothpoick should come out clean. If necessary, cake can be placed back in the pressure cooker for an additional 5 minutes.
Step 13
Put bundt pan on a cooling rack and allow to cool in pan for 10 minutes. Then release cake from pan onto cooling rack to finish cooling.
Step 14
Add a dusting of powdered sugar, if desired onto cooled cake.
