Step 1

In a stand mixer add the butter, sugar, vanilla, lemon, and cream until very light and fluffy.

Step 2

Add in the eggs one at time, mixing well after each egg.

Step 3

In a medium bowl sift together the flour, baking soda, baking powder, and salt.

Step 4

Slowly add the buttermilk and flour mixture to the cream mixture.

Step 5

Alternate between flour mixture and buttermilk.

Step 6

Pour the batter into a greased bundt pan.

Step 7

Cover with foil.

Step 8

Add 2 cups water to Instant Pot insert and a trivet.

Step 9

Place the pan in the Instant Pot to rest on the trivet.

Step 10

Close the lid and turn the pressure valve.

Step 11

Cook on manual for 90 minutes.

Step 12

Let the pressure release naturally.

Step 13

Remove the pound cake.

Step 14

Allow to cool before removing from the pan.

Step 15

Garnish with whip cream and fresh fruit.
